As you may have guessed, we use a Wicked Edge Generation 4 Pro precision knife sharpening system. This is the most precise, and variable sharpening system we have found.
For sharpening or re-sharpening knives, we do not use motor driven equipment. This not only allows us to be portable and go to our customers, but motor driven wheels can generate substantial amounts of heat. This may discolor your blade, and even anneal the edge, making it softer where the work is done.
Our hand-sharped approach is a little bit slower, and a lot more refined. Using several steps, we repair tiny chips and rollovers by gently removing material, inspecting the edge after each step. Once the edge is shaped, we hone it with finer and finer blocks to remove any scratches that cause friction when using the knife.
